How to make Brookie Cookies with a Cake and Brownie Mix

  1. For the Cookie dough combine yellow cake mix, flour, oil and eggs with a hand held mixer {or by hand} until combined. Add mini chocolate chips and mix until evenly distributed.
  2. For the Brownie dough combine the brownie mix, flour, oil and eggs with a hand held mixer {or by hand} until combined.
  3. To get a uniform cookie, use a medium cookie scoop and scoop one mound of each dough onto a silicone mat {or parchment} lined baking sheet.
  4. Then combine the two scoops of dough into one cookie. Roll them in your hand until they are in a nice round ball that is half chocolate chip cookie dough and half brownie cookie dough. Place them back onto the silicone mat {or parchment} lined baking sheet.
